This is not a must have DVD. It covers 9 recipes. Summer fruit tart, deep dish apple pie, classic white layer cake, chocolate mousse cake, corn muffins w/variations, creme brulee, classic brownies, spritz cookies, and molasses spice cookies.
We got this for the creme brulee recipe. and it looks great. We will try it soon and know it will come out fine because everything we have done from America's test kitchen does.
So it comes down to, are 9 recipes worth 11-18 dollars? Unless you need constant instruction every time you cook something, We don't think so.
Most of these recipes are available on their website or their subscription cooksillustrated website. not to mention their myriad volumes of cook books.
The equipment reviews seem to be pointless for a DVD. In 10 years none of the products will exist.
The printable recipes from your computer worked just fine from my OSX machine. which are all accessible through a HTML file that navigates well. Acrobat required to view/print recipes.
Bottom line. If they supplied more recipe content unique to the DVD and eliminated the pointless equipment reviews. this would have been a better product.
If you can get it from the other sellers for less than 5 bucks get it. But Its not worth 20

The shows are excellent. I found the quality of the production to be very good. The recipes are great, the episodes are fun to watch and they are often humorous. I personally would prefer more cooking and less equipment and product taste testing, but that is just a personal preference.
[Note: There are no recipes included on these DVD's - of any season - until Season 9. Season 9 does have recipes. Presumably they will be included in future editions, as well. Clearly they wanted to sell the recipes either in the companion book or online, so it is to their credit they have started including the recipes on the DVD's. Also, there seem to be parts of episodes missing from the DVD's that were part of the actual season. The web site has all the episodes listed with each and every recipe they did.]
I have copies of all seasons and I would recommend them in spite of these issues because they are very helpful, instructive, and fun to watch.
You can get all old seasons on their web site for 50% off and with quite reasonable shipping costs.

I have to admit I have never seen this show on TV though its been around, but I started with this one - Season 10. And I found it both interesting and creatively indexed for home video. There are 28 half-hour shows here and they cover about 50 recipes in total. Each show seems to have a "theme", such as "The Italian Grill", "Rolls and Loaves" and "Two Ways With Pork". On a typical show host Chris Kimbell meets with two chefs to learn recipes and then meets with another staffer who does product reviews (some for this you can probably do without like heavy meat presses) and another for food tastings (Provolone cheese, for example). And, because this is PBS, there is even a "science of food segment".
You can also watch JUST the recipe portions or the tastings or the product reviews and the DVDs have a CD-ROM component that lets you print the recipes.
Some are simple and easy to follow. Some a bit more complex but, on the first disc, I learned the "secret" to great pork chops (cook in oven on low heat and THEN brown in a pan). Made them the next night and they were delicious. I have others noted to try soon too. Its nice to watch a show without commercials every few minutes and having a visual cookbook like this is helpful.
A nice alternate to The Food Channel and probably a must for those who found this show after Season 10.

I would have given more stars, what is lacking is an INDEX of the contents and WRITTEN recipes. Often they forget to mention quantities on the video, hence the need for the written recipes. You would think they would have been included with the DVD set, without having to join www.americastestkitchen.com to obtain them. Also noticed that not all episodes/recipes shown on http://www.americastestkitchen.com/episodelist.asp?iseason=2 are not on the DVD's, see my index below of Disc 1.
But, I have learned a lot from the videos, just wish they would have included an index and recipes.

If you like the show you will like this DVD. The menu lets you pick the receipe or reveiw you want without having to fast forward through the show (an improvment from previous DVD's). Why not 5 stars? The DVD package is cheap compared to the previous DVD's.

Cook a incredibly juicy turkey in about 2 1/2 hours? YES! Simple techniques with amazing results. They show how and why a particle technique works; or does not work. Todays leaner cuts of meat can be very overcooked using Grandma or Moms' recipe. Easy ways to upgrade and fine tune your cooking without expensive, impossible-to-find ingredients. The recipes are great! Fewer pots/pans and no need for "speciality" kitchen appliances. Treat yourself to this DVD and enjoy cooking !

I checked this DVD out of the library, then decided I needed to own my own copy. It's the best cooking class I've ever attended (even better--you can freeze and rewind a DVD. Try asking a cooking teacher in a class to back up.) The recipes are well-thought out (and tasty!), the instruction entertaining and easy-to-follow, and the tone down-to-earth. This show is about teaching you, not entertaining you with catch phrases and wacky food combinations. It acknowledges that you're not a gourmet chef with unlimited time, a pantry full of exotic ingredients, and a kitchen full of gadgets. Instead, they keep it real. Bow-tie clad Christopher Kimball is no one's idea of eye candy, but he's personable and warm, and he keeps the show grounded in the real world by asking questions, making suggestions, and adding to explanations. Everyone involved comes across as a real person, not a celebrity with an inflated ego.
The "hook" of America's Test Kitchen is that they try all sorts of different ways of making a recipe for weeks behind the scenes, then show you the ingredients and preparation method that they found made the tastiest result. They also test and rate ingredients (like brands of dark chocolate) and tools (like food processors) and give you recommendations in various price ranges. All the recipes (and some bonus ones) are included on the DVD--just load it into your computer.
For anyone who loves to cook but still has a thing or two to learn, this DVD is a real find. For a beginner, it is a great introduction to the kitchen.
